Wiston Rosé is a blend of Chardonnay, Pinot Noir and Meunier. The grapes are hand harvested and pressed in whole bunches using a traditional, Coquard basket press (as used in Champagne) to preserve the delicate fruit flavours and aromas of the juice. The juice is fermented in stainless steel tanks after which a small proportion of still red wine was added to the blend to produce a rosé wine. A secondary fermentation occurs in bottle then aged for over 3 years to take on brioche flavors and develop the creamy textured mousse.
