Wine Description:
Vecchia Torre Salice Salentino is a majority blend of Negroamaro with a touch of Malvasia Nera produced by Cantina Vecchia Torre. The vineyards for this wine are located in the Salice Salentino region of Puglia, in the heel of Italy. This warm Mediterranean climate provides the ideal conditions for ripening these heat-seeking black grapes. On arrival at the winery, the grapes are passed through a de-stemmer and undergo an alcoholic fermentation on skins, before the wine is aged for around 6 months in oak barrels prior to its release.

Perrini Negroamaro comes from estate old vines located on flat and slightly hilly sites. The farming is certified organic and the fruit is harvested by hand before being transferred to the winery to begin processing. The grapes are gently pressed and the juice fermented in stainless steel tanks with skin contact to extract tannin and richness of flavor. Finally, the wine is aged in steel tank to harmonise the flavors, without seeking to impart new oak spice.
