Vecchia Torre Salice Salentino is a majority blend of Negroamaro with a touch of Malvasia Nera produced by Cantina Vecchia Torre. The vineyards for this wine are located in the Salice Salentino region of Puglia, in the heel of Italy. This warm Mediterranean climate provides the ideal conditions for ripening these heat-seeking black grapes. On arrival at the winery, the grapes are passed through a de-stemmer and undergo an alcoholic fermentation on skins, before the wine is aged for around 6 months in oak barrels prior to its release.

Il Tauro Salice Salentino Riserva is made from the Malvasia Nera and Negroamaro grape varieties. After harvesting, the grapes are quickly taken to the press house. Here they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Once fermentation is complete, aging takes place in oak barrels, resulting in a complex and full-bodied wine with a deep ruby color and intense aromas of dark fruit, spices, and vanilla. Perrini Negroamaro comes from estate old vines located on flat and slightly hilly sites. The farming is certified organic and the fruit is harvested by hand before being transferred to the winery to begin processing. The grapes are gently pressed and the juice fermented in stainless steel tanks with skin contact to extract tannin and richness of flavor. Finally, the wine is aged in steel tank to harmonise the flavors, without seeking to impart new oak spice.
