The winemaking process involves a careful eight-hour cold maceration with the skins, followed by fermentation in stainless steel tanks at controlled temperatures of 14-16°C. After six months of aging on lees in stainless steel and an additional three months in bottle, Valenti Poesia presents a wine of extraordinary aromatic complexity, vibrant freshness, and notable minerality.
