The vineyard where the grapes for Pelago are grown is situated in the municipality of Osimo on a hillside approximately 100-150 meters above sea level, facing southeast. The soil, dating back to marine Plio-Pleistocene formations, is deep, loamy, and rich in clay, with a significant limestone content. The grape varietals used in Pelago include Cabernet Sauvignon, Merlot, and indigenous Conero varietals. The vineyard's yield per hectare is controlled through meticulous pruning and selective thinning. The grape harvest is done manually. The vinification process involves destemming and gently crushing the grapes, which are then allowed to ferment in stainless steel tanks with submerged cap, using native yeasts. Following the completion of malolactic fermentation, the wine undergoes an aging process. Pelago is aged in 225-liter oak barriques for 14 months. After bottling, the wine continues to mature under temperature-controlled conditions for approximately 12 months. On the nose, Pelago reveals intense, clean, and refined fragrances harmonize with typical Cabernet herbal and hay undertones. In the mouth, the wine boasts substantial yet evolved tannins and a flavor profile that perfectly complements the wine's remarkable elegance, making it an exceptional choice for wine connoisseurs.
