Sassontino originates from one of the historic vineyards of the Casanova estate, known for its sandy soil that offers a distinctive Piedmontese interpretation of Sangiovese. This wine presents a bouquet with floral scents intertwined with notes of black cherry and currant. On the palate, it is decisive and dry, leading to a captivating and savory finish. It is made of 100% Sangiovese from the Sassontino in Terricciola (Pi) vineyard. Maceration and alcoholic fermentation took place in temperature-controlled vats for an average of 14-15 days. Malolactic fermentation has conducted in French oak barrels, with 20% new and the remainder in used oak (2nd passage). The wine was then aged for 24 months and bottle-aged for a minimum of 100 months. The very first vintage of this has been 2003.
