Tobin James Cellars Cabernet Sauvignon Notorious is an oak-aged Cabernet Sauvignon hailing from Paso Robles, Central Coast California. After harvesting, the grapes are destemmed and crushed to liberate the juice, then transferred to inert vessels to begin alcoholic fermentation. The wine is fermented at warm temperatures to increase extraction of tannins and richness of flavors. Once the fermentation is complete, the wine is transferred to oak barrels, a proportion of which are new, in order to round out the tannins and improve the texture. The new oak barrels also contribute notes of vanilla and cinnamon that complement the succulent dark fruit notes of cassis and blackberry.
