Buondonno Rosso blend varies from year to year but it is typically produced from 90 to 100% of Sangiovese with small quantities of Canaiolo, Merlot and Syrah. The grapes come from younger vineyards and from those areas in adult vineyards where, generally, there is more fertility and more abundant production. Soils are composed of clay-limestone shales with various exposures from east to south and north west from altitudes ranging from 400 to 450 meters above sea level. Winemaking decisions are predicated on preserving the fruit and freshness as much as possible. Spontaneous fermentation begins with short maceration on the skins in concrete and steel vats for 12/15 days with repeated pumping over and punching down Maturation occurs in multi-passage oak barrels and partly in concrete vats where the malolactic fermentation also takes place with a further minimum of 3 months in bottle.
