This method of sweet wine production in a Mediterranean climate is truly exceptional. Harvested from a 30-year-old Chenin block, grapes are picked at the same ripeness level as table wine to preserve primary fruit character and acidity, crucial for a superb sweet wine. Naturally dried for two weeks, then pressed and aged in old French oak barrels in a solera system, the wine matures for years, concentrating acidity, sweetness, and flavor. The 35-year-old Chenin Blanc vines, rooted in weathered sandstone, employ organic farming methods, trellised on an east-facing "skuinskap" system. Chenin Blanc, picked at normal ripeness, undergoes a two-week drying process before fermentation in old French oak barrels.
