Thomas Labille Chablis is a white wine from the Chablis subregion, which is the northernmost part of the famous French wine region of Burgundy. The wine is made exclusively from Chardonnay grapes grown in vinyards across the region. Chablis is notable for its cool, continental climate, which result in a wine with predominantly citric fruit expreesion and mouthwatering acidity. The local soils have a high level of limestone that is rich in sea fossils, which together result in the wine exhibiting a mineral complexity on the finish. The wine is made in traditional style with temperature controlled fermentation in neutral vessels to preserve the purity of its fruit expression, followed by aging in old oak barrels for more than a year to develop a broader, textural, mouthfeel. This wine's acidity makes it a food friendly style for lighter dishes involving white meats and seafood.
