The rising price of Burgundian Chardonnay has led to a revival of interest in Aligote, Burgundy's other white grape. Fortunately, this has also coincided with a warming climate which has helped to temper the grapes natural high aciidity. Sylvain Pataille is considered to be a master of the grape variety. The grapes used to make this wine were grown in the Clos du Roy vinyard. The vineyard was originally the property of the Dukes of Burgundy and was known as the Clos des Ducs util their defeat by the French King in 1477. The winemaking involves wild yeast fermentation and maturation for 24 months in old oak to add texture to balance the natural acidity. The end result is a crisp white burgundy witn notes of quince and grass with a subtle phenolic texture. This would be a good choice for regular drinkers of Chablis who are seeking something new.
