St. Michael-Eppan Fallwind Sauvignon is a delightful wine that benefits from a unique microclimate. Produced by the St. Michael-Eppan co-operative, this wine is crafted from Sauvignon Blanc grapes grown in exceptional vineyards. The vineyardd benefits from a nightly downdraft from the higher central massif, which keeps the vineyards cool and the grapes packed with refreshing acidity. The winemaking focuses on preserving this freshness by fermenting the juice in stainless steel in the absence of oxygen. The wine is matured on lees for up to six months to add a balancing richness to the mid-palate. Expect a refreshing wine with notes of grass and asparagus along with a chalky mineral finish, a result of limestone rich soils. This is a good alternative to both the more tropical style of Sauvignon Blanc from New Zealand or the more restrained, but expensive wines of the Loire Valley.
