The fruit, hand-harvested and triple sorted (in the vineyard, before, and after destemming), was primarily whole berries gravity-fed into stainless steel fermenters. To concentrate the juice for red fermentations, approximately 20% of the juice was bled from the tanks after 24-48 hours and used for rosé. Fermentations were conducted separately by variety and clone, with daily pump overs and manual punch downs for maximum extraction of color, aroma, and flavor. After 8-10 days of fermentation and 7-14 days of post-fermentation maceration, the young wines were pressed and aged in French oak barrels for 12-15 months, completing malolactic fermentation in barrel.

This Cabernet Sauvignon, with a touch of Malbec, embodies the essence of the Bianchi style. Sourced from the Finca Asti vineyard in San Rafael, with yields limited to 7,000 kg/ha, this wine is a true expression of its terroir. A deep, dark ruby color with vibrant violet hues sets the stage for an aromatic symphony of pepper, red bell pepper, and dark fruit notes. The signature minerality of Finca Asti shines through, complemented by elegantly integrated vanilla and chocolate nuances from oak aging. On the palate, a powerful structure unfolds, showcasing remarkable complexity. This wine is a testament to Bianchi's mastery of Cabernet Sauvignon, leaving no desire unfulfilled. With a limited production of just 13,000 bottles, this is a gem to be savored.
