The winemaking process for Sherwood Pinot Noir is a meticulous blend of techniques.Most of the grapes are placed into open-top fermentation tanks for a preferment soak, allowing natural flavors to develop before fermentation begins with indigenous yeast. A portion of the grapes is fermented in tanks with pump overs to ensure even extraction, while a small fraction is kept as whole berries and undergoes carbonic maceration for added complexity. Once fermentation is complete, a partial micro-oxygenation process is initiated, helping the wine achieve a softer and rounder mouthfeel earlier in its development. This careful approach results in a Pinot Noir that is both approachable and sophisticated.
