WINE DESCRIPTION
Sandeman Character Medium Dry Amontillado Sherry is made from a majority of the Palomino Fino variety with a small proportion of Pedro Ximenez to give the wine a richness and sweetness. After undergoing a combination of biological and oxidative aging for an average of nine years in small casks, where the pale wines slowly evolve into medium gold amber colours. The flavours develop aromas of nuts and dried fruits reminiscent of dates and figs. Later a small amount of rich Pedro Ximénez Sherry is blended in to make a medium dry and complex wine with a touch of sweetness.
