Posip is an indigenous Croatian grape variety that is native to the island of Korcula in Dalmatia. Famously, Posip was planted by Mike Grgich, winemaker of the 1973 Chateau Monelena Chardonnay that won the Judgement of Paris, when he started his own Croatian vineyard. Saints Hills is a winery located in Croatia's Dalmatian region. They source their Posip from vineyards in the more northern Istria to obtain more freshness from the early ripening variety. The winemaking process focuses on retaining the purity of expression with the wines fermented in stainless steel at cool temperatures. This citric and saline wine with an oily texture paired locally with abundant seafood is a great choice for those who love to explore indigenous varieties.
