WINE DESCRIPTION
Located in the Var hinterland at an altitude of 300 meters, this vineyard benefits from clay limestone soils and cooler nights, allowing for a late harvest. The grapes are harvested mechanically overnight, ensuring freshness as they are quickly transported to the winery. Skin maceration is brief: 3 to 6 hours for Grenache and only 1 hour for Syrah. The juice settles cold for 48 to 72 hours before alcoholic fermentation begins at 14°C, later maintained between 16 and 18°C for 10 days. Aged on fine lees in stainless steel and concrete tanks for 2 months, the wine is racked and filtered by late December. Blending occurs in early January, and the wine is ready for tasting by mid-February.
