WINE DESCRIPTION
Upon grape reception at the winery, a careful selection of bunches is carried out, followed by loading into the maceration tank. Before yeast inoculation, a pre-fermentation maceration at 8°C is conducted for 5 days, including two daily pigeages. Fermentation begins after cold maceration, utilizing selected yeasts at 28°C for approximately 10 days. The total maceration period lasts 21 days with daily pumpovers during the initial 4 days and two delestages within that timeframe for extraction. After fermentation, the tank is filled with wine of similar quality to complete the 21-day maceration. Finally, the wine is separated from the press drop, with only drop wine used. Malolactic fermentation occurs in tanks before barrel aging.
