WINE DESCRIPTION
Pegasus Bay Chardonnay undergoes traditional Burgundian winemaking techniques. The grapes are hand-picked in stages from late March to early April, then gently trodden underfoot to enhance complexity and phenolic structure. The juice, not clarified, is placed into large French oak barrels (puncheons), with 70% being old to minimize oak flavor absorption. Indigenous yeasts initiate primary fermentation within these barrels. The wine matures on its natural yeast lees (sur lie) within the puncheons, starting spontaneous secondary (malolactic) fermentation in the summer after harvest. Fermentation halts once the ideal balance is achieved, typically after about 12 months of maturation before bottling.
