Approximately 20% of the Vermentino grapes are harvested ripe but slightly earlier than the others to impart extra freshness and structure to the wine. Fermentation occurs in stainless steel tanks and terracotta amphorae through spontaneous fermentation, utilizing the natural yeasts present on the grapes. No artificially produced cultured yeasts are added. 80% of the must is aged in stainless steel tanks, while 20% is aged for five months in large Tonneaux oak barrels.
