Domaine Notre Dame des Pallières Sablet L'Olivet Côtes du Rhône Villages is a distinguished wine produced with a meticulous approach by the estate. This blend, comprised of 50% Grenache and 50% Syrah, reflects the terroir of Sablet, with Grenache vines over 40 years old on clay-limestone slopes and Syrah vines on silico-limestone soil near the village. The meticulous vinification involves manual harvesting of select old vines, careful sorting, and destemming of all clusters. The two grape varieties undergo separate vinification with a 20-day maceration period and temperature control. The final blend occurs post-fermentation, allowing for a harmonious marriage of the distinct qualities of Grenache and Syrah. The result is a wine of character and complexity, embodying the essence of the Côtes du Rhône Villages appellation.
