From the renowned Casablanca Valley comes a distinguished Pinot Noir, harvested over three days in February. Cultivated organically, manual harvesting ensures pristine fruit quality. Granitic and red clay soils impart character to the vines, which yield just 5 tons per hectare. The warm, rainless season prompted an early harvest. In the winery, meticulous care continues: destemming precedes fermentation in concrete barrels or eggs, where native yeasts work their magic at 20°C. After 20 months of aging in ovoid barrels, the wine is bottled onsite, capturing the essence of its terroir in every sip.
