Heredad Montsarra, originating from a medieval Catalan farmhouse in Torroelles de Foix, is a renowned vineyard in Alt Penedes, and it joined Bardinet, S.A. in 1992. Montsarra Cava is skillfully crafted from a blend of native grape varieties. Macabeo, constituting 60 to 70 percent, brings strength and quality, while Xarello (15 to 20 percent) adds substance, and Parellada (15 to 20 percent) enriches the aroma. The cava undergoes a second fermentation in the cellars to maintain a constant temperature, safeguarded against light and vibration. Typically, Montsarra Cava is aged for a minimum of 1 1/2 to 2 years in these conditions.
