WINE DESCRIPTION
Nestled within the southern expanse of the Rully appellation lies a distinctive terroir, characterized by its dominant limestone-rich soil. Spanning 1.10 hectares, this cold and windswept region demands patience for optimal grape maturity. The vines, aged over 60 years on average, thrive in shallow 15 cm soil, fostering direct mineral interaction. The meticulous winemaking process begins with manual harvesting, followed by gentle pressing of the grapes. Natural fermentation takes place in 300-litre and 400-litre barrels, eschewing added yeast to preserve Chardonnay's inherent fruitiness. Aging occurs in barrels, with 15% being new, ensuring a nuanced and approachable final cuvée.
