The vineyards for this wine are located in the Salice Salentino region of Puglia, in the heel of Italy. This warm Mediterranean climate provides the ideal conditions for ripening these heat-seeking black grapes. On arrival at the winery, the grapes are passed through a de-stemmer and undergo an alcoholic fermentation on skins, before the wine is aged for around 6 months in oak barrels prior to its release.
