The winemaking process involves a meticulous selection of dried grapes, which are harvested and dried until mid-January, then carefully sorted to remove any imperfect or mold-affected fruit. The fermentation occurs in stainless steel tanks with a 21-day maceration period, followed by malolactic fermentation and aging in oak barrels for approximately 20 months. The wine is further refined in the bottle for 10 months before release, resulting in a wine of exceptional body and finesse.
