Lioco Indica Rosé is crafted from Carignan grapes sourced from mid-20th century, dry-farmed, head-trained vines rooted in red clay and rocky soil. These rugged vineyard conditions, along with significant diurnal temperature shifts, allow the grapes to ripen slowly, enhancing the wine’s depth. The hand-harvested fruit is gently pressed and fermented cool in stainless steel, preserving a vibrant profile. A gradual malolactic fermentation balances the wine's naturally high acidity, giving it a smooth finish. Minimal intervention, including gentle filtration, allows this rosé to retain its fresh character while showcasing the unique qualities of the vineyard’s old vines and terroir.
