The winery employs 70% old Burgundy oak barrels, including Aquaflex barrels for gentle still wine fermentation of grand cru Chardonnay, imparting subtle vanilla and spice notes while preserving the wine's initial fruit characteristics. The wines are zero dosage, undergo no malolactic fermentation, and enjoy a minimum of five years on the lees before disgorgement.
