Maison Fèvre produces twice as much as Domaine Fèvre, resulting in a significant quality difference. While Domaine focuses on organic vineyard work, this isn't the case for Maison. Hence, these two should not be confused in terms of quality. All our wines undergo spontaneous fermentation and strict organic farming, although they lack certification. After a few hours of maceration, there's immediate pressing into a sediment tank and steel fermentation. Post-fermentation, the wines rest in used barrels with full lees for six months, without any batonnage. These exceptional wines, from prime locations, exhibit remarkable complexity and finesse, some even approaching sublimity.

Soils are composed of kimmeridgian marl limestone. Vinification takes place in stainless steel tanks to retain the purity of flavors of Chardonnay grown in this unique terroir. Maturation last for approximately a year and a half on fine lees in mostly stainless steel tanks with a small proportion of large barrels, some of which are new. The resulting wine is citrusy, crisp, and mineral-driven.
