This wine has a youthful color that is almost water-white.On the nose, it is concentrated and aromatic with notes of peach skin, green apple, and slatey mineral complexity. The palate is medium-bodied and sweet, but with exceptionally well-balanced vibrant acidity that has a moreish sweet-and-sour aspect. Only just beginning to show signs of honeyed development, this wine is highly drinkable now but will also develop petrol-like complexity over the next 25 years. Serve with seared scallops, lardons, and apple puree.
