Delicate Chablis, grown in biodynamic conditions from steep slopes with chalk and marine fossils, featuring an ammonite on the label. Fermented in stainless steel, with a pale to medium yellow hue, and aromas of citrus and green melon. On the palate, this wine displays a lively character, even by a consistent blend of fruit, acidity, and gentle accents of lime, apricot, and nutty undertones, accompanied by a smooth, oily body with a minerality similar to of chalk and a hint of salinity.
Kemakorn
A masterful Chablis, boasting an amazing nose, a vibrant colour, and a elegant yet balanced taste profile, with a notable lake acidity, balanced by full bodied buttery and zesty notes, alongside crisp apple and gooseberry flavours, a true triumph.
Solovey
Delightful Chablis moment in the City of Light, despite a few misadventures along the way. The train ride was a charming surprise, and the bonus French lesson with Pascal was a lovely bonus. The wine was a lean zing, with accents of lemon, green apple, and passion fruit. The oyster shell was a nice touch. The winemaker was a pleasure to meet, and I'm grateful for the opportunity to have visited the airport hotel, which served up a delicious sea bass.
