Grapes for VISANTO BY GAIA are meticulously sun-dried on Santorini. After around ten days of sun exposure and partial shade drying to preserve fruitiness, they're pressed extensively for their concentrated must, yielding 80-100 liters per acre. The must ferments slowly in aged oak barrels, halting naturally due to sugars and alcohol, creating a sweet wine. The VISANTO BY GAIA ages for at least a decade in the same barrels, developing a deep honey color and complex aroma. It's bottled without treatment, resulting in an intensely aromatic wine with caramelized fruit, coffee, bergamot, and dried fig notes. Despite its sweetness, it maintains balance and acidity.
