Harvested at moderate ripeness, the hand-picked fruit undergoes a delicate whole-bunch pressing, followed by a split fermentation process—half in stainless steel with cultured yeast and half in old French oak barriques with indigenous yeast. The wine retains a natural acidity and 19 g/l of residual sugar, resulting in a balanced and vibrant profile.
