WINE DESCRIPTION
Handpicked grapes undergo a meticulous process at the winery, transported in small bins and gently whole-cluster pressed to preserve their delicate vibrancy. Only the initial press, rich in subtle flavors and aromas, is utilized for fermentation in stainless steel tanks at 55-60°F. Following a six-month primary fermentation, the winemaking team meticulously crafts the final blend from 14 distinct wine lots. The wine is bottled and aged on the lees for five years, allowing it to develop complexity and effervescence. This meticulous approach results in a sparkling wine that showcases the pinnacle of refinement, marked by a rich, layered character.
