The vines bush vines, locally known as alberello, with an impressive 120-year-old average age. This old-vine heritage brings depth and character to the grapes. The winemaking process is equally traditional, starting with destemming, spontaneous fermentation, and skin maceration in 220-liter dolia buried in the local tuff stone. After primary fermentation, the wine is transferred to amphora, and eventually bottled for further refinement. With only 600 bottles crafted, this wine is a true gem. Using the minimal intervention method, this wine highlights the natural character of the Zibibbo grape. The result is an exceptional and truly unique expression of this variety, featuring aromatic and fruity notes that embody the essence of Sicilian winemaking and culture.
