Filipa Pato Nossa Calcário Tinto from Bairrada embodies a rich legacy of winemaking. Hailing from a family deeply rooted in the wine culture of Beiras since the 18th century, Filipa Pato, with her husband William Wouters, continues this tradition with passion and innovation. In 2001, they established their vineyard spanning 12 hectares across Bairrada. Embracing biodynamic farming and minimal-intervention winemaking, they exclusively focus on indigenous grapes, particularly the Baga variety. The terroir, characterized by limestone subsoil with a touch of gravelly clay, influenced by the Atlantic, imparts a unique quality. The wine undergoes fermentation in open oak barrels with 20% stems and ages in 500-liter French oak barrels, 30% new. The wine, Nossa Calcário red, reflects Bairrada's resurgence under Luis Pato's influence, showcasing indigenous varietals with minimal interference, a true embodiment of the region's terroir and winemaking history.
