WINE DESCRIPTION
Fidélitas Cabernet Sauvignon is an age worthy, intense, oaked, black fruited wine with a firm tannin structure that can be drunk now or enjoyed over the next decade. The wine is made from Cabernet Sauvignon fruit from over 50 blocks across over a dozen different vineyards within the Red Mountain AVA. The long hours of sunshine and cool night temperature result in a wine with bold fruit and bright acidity. The wine is matire in a mix of American and French oak, about a quarter of which is new, for added complexity. The wine is a good example of the AVA and will provide enjoyable drinking over the next decade.

Fidélitas Cabernet Sauvignon shows a deep purple colour and a bold nose of ripe black cherry and blackcurrant fruit.The palate is dry with a full body and dusty tannins. The finish is long with vanilla and dill notes of from a mix of French and American oak. This is a good match for peppered beef and dumpling during the winter or with hard cheeses. Although the wine can be drunk now it will develop tobacco like complexity over the next decade.
