Comprising 70% Sangiovese and 30% Colorino, the grapes undergo meticulous manual harvesting. Winemaking involves gentle destemming and crushing, followed by fermentation in specialized stainless steel tanks for 10 days, utilizing indigenous yeasts. The wine then undergoes a unique aging process: 4 months in cement tanks for malolactic fermentation, followed by 12 months in Slavonian wooden barrels, and a final 4-month refinement in the bottle.
