WINE DESCRIPTION
Excelsior Shiraz Paddock is a distinctive wine from Robertson, South Africa, with a rich heritage tied to its unique terroir. Named after vineyards that once served as horse paddocks, this Shiraz benefits from 60 years of thoroughbred grazing, resulting in lime-rich soils that impart greater spice notes to the grapes. Hand-harvested for optimal quality, the grapes are destemmed but not crushed, and fermentation takes place in stainless steel tanks over seven days at 28-32°C. Aerated racking twice daily ensures a clean ferment and soft tannins. After gentle pressing and malolactic fermentation in tanks, 30% of the wine is aged in French and American oak for eight months, while the rest remains in stainless steel. The result is a well-balanced Shiraz with enhanced spice characteristics, embodying the essence of Robertson's winemaking tradition.
