Emile Beyer Pinot Noir Tradition is mostly produced from estate fruit coming from young vines, as well as a portion of purchased fruit. The grapes can be sourced from all over Alsace, located in France's far Northeast. Grapes are grown organically on limestone-clay soils. The “tradition” range is intended to be consumed young, expressing varietal character of the grapes. The grapes are pressed gently, with the juice allowed to settle before a cool and long fermentation in stainless steel tanks. Maturation occurs in tank on the lees for several months prior to bottling.
