WINE DESCRIPTION
Carefully and hand-harvested, the Dreissigacker Riesling is derived from grapes cultivated in biodynamically managed vineyards around Bechtheim and Westhofen. At Dreissigacker, they prioritize gentle processing during winemaking. The handpicked Riesling grapes are delicately transported to the winery in small containers. In the cellar, the wine is crafted with finesse, placing emphasis on sedimentation for clarification, abstaining from treatment agents, and employing fall pressure instead of pumps. Spontaneous fermentation with whole berries imparts depth and structure to the Riesling. With 90% stainless steel barrel and 10% double-piece barrel aging, the wine rests for 6 months on the lees and then on fine lees until bottling. This meticulous process results in the Dreissigacker Riesling exhibiting a beautifully integrated acidity, characteristic of the Riesling grape variety.
