Wine tannin gives wine its textural mouthfeel and astringency. Tannin is a natural compound found in grape skins, seeds, and stems. It contributes to the structure and helps to balance out the sweetness of the fruit. Louis Latour, a prestigious name in Burgundy for over two hundred years, was established in 1797. A winemaking family in Aloxe-Corton for centuries, they patiently built their vineyards to around fifty hectares, 29 hectares of which are classified as Grands Crus in the Côtes d'Or. The estate spans from Côte de Beaune to Côte de Nuits and includes the Château Corton Grancey and cellars dating back to 1834. Currently led by Louis-Fabrice Latour in the seventh generation, the majority of Domaine Louis Latour's vineyards are located in Aloxe-Corton. The harvest, usually in mid-September, is done entirely by hand based on grape ripeness and health. The red wines are traditionally vinified and aged in the historic Cuvee of Corton Grancey, with only the best grapes selected for fermentation in oak barrels. After approximately 12 months of aging, the wine is stored in the cellar for additional months before being offered for sale.

Domaine des Perdrix is located in the Côte de Nuits region, within the municipality of Nuits-Saint-Georges. It encompasses approximately 12 hectares of vineyards in Nuits-Saint-Georges and Vosne-Romanée. This includes nearly 5 hectares designated as Nuits-Saint-Georges AOC, with the prominent 3.5-hectare "Premier Cru Aux Perdrix" being virtually a monopoly, owned at 99% by Domaine des Perdrix. This Premier Cru enjoys an esteemed reputation. Remarkably, partridges (perdrix) still roam through the vineyards, lending authenticity to the wine's name. The wines exhibit a distinct style – elegant, light-footed, and fresh. Barrel aging is judiciously managed to keep oak influences subtle on the nose. Nonetheless, a touch of barrel aging is deemed necessary to strike the perfect wood-fruit balance, a rarity. Œnologist Robert Vernizeau has overseen the wines since 1996.
