Wine tannin gives wine its textural mouthfeel and astringency. Tannin is a natural compound found in grape skins, seeds, and stems. Founded in 1903 by Etienne Sauzet in Puligny-Montrachet, this estate began with a small parcel of inherited vines and steadily expanded under his stewardship, reaching 12 hectares by his passing in 1975. Since then, his daughter Jeanine, alongside her husband Gérard Boudot, has overseen the estate. With vineyards in 4 Grand Cru and numerous Premier Cru and other sites, the family also sources grapes from external growers meeting the estate's high standards. Spontaneous fermentation occurs in large oak barrels, temperature-controlled and lasting weeks to months, with the entire winemaking process, from must to lees aging, spanning up to 18 months.
