Clotilde Davenne, a Burgundy native, learned the value of nature and hard work in the vineyards during her childhood in Morvan. After studying oenology and training in Beaujolais and California, she became cellar master at Domaine Brocard in 1989, elevating its reputation across Petit Chablis to Grand Cru. Driven by a dream of owning her vineyard, she gradually acquired parcels in Saint Bris, Chablis, and Irancy, founding her Domaine, Les Temps Perdus, in 2004. Now spanning 30 hectares with some vines over 100 years old, Davenne crafts wines that express terroir, featuring controlled yields, spontaneous fermentation, and stainless steel aging, celebrated for their vibrant, mineral freshness.
NOTES FROM VINOVOSS SOMMELIER
This wine, Domaine Les Temps Perdus - Clotilde Davenne Bourgogne Blanc Chardonnay, is a delightful expression of a white Burgundy made from the Chardonnay grape variety. On the nose, this wine offers a complex bouquet of ripe citrus fruits, such as lemon and grapefruit, intertwined with subtle floral notes and a touch of minerality. The aromas are vibrant and inviting, promising a refreshing and elegant experience.
The palate is equally impressive, with a harmonious balance between the fruit flavors and the well-integrated oak influence. The Chardonnay grapes have been carefully vinified to preserve their natural acidity, resulting in a crisp and lively mouthfeel. Flavors of juicy pear, green apple, and a hint of vanilla unfold on the palate, leading to a long and satisfying finish.
The Domaine Les Temps Perdus - Clotilde Davenne Bourgogne Blanc Chardonnay is a versatile wine that can be enjoyed on its own or paired with a variety of dishes. It would complement seafood, such as grilled prawns or pan-seared scallops, as well as creamy poultry dishes or soft cheeses.
