The wine originates from the Camargue region (Languedoc) in Montcalm, situated between Aigues-Mortes and Les Saintes Maries de la Mer. The area experiences a Mediterranean climate, well-tempered by the proximity of the Mediterranean Sea, ensuring a balanced ripening of the grapes. Since 2012, the former "Vin de Pays des Sables" (Sand Wine) has received the new appellation "Sable de Camargue." Since then, the wine has been bottled in the attractive new "Grande Camargue" bottle, specifically developed by Maison Jeanjean in collaboration with their glass supplier.

Stretching between the Mediterranean Sea and the Alps, the Provençal wine-growing region spans about 200 km from west to east, primarily in the departments of Var and Bouches-du-Rhône, with a smaller part also in the Alpes-Maritimes department. Renowned for its clear, fruity, and abundant rosé wines, the region also produces notably robust and well-structured red wines capable of aging for several years in the cellar, as well as airy, delicate white wines. Situated on the rocky slopes of the Coudoux hill range, the Château Saint Hilaire vineyard encompasses 60 hectares of organically cultivated land, benefiting from exceptional sunlight influenced by the Mediterranean and the Mistral wind. The Lapierre family has been cultivating vines in the commune of Coudoux since the late 18th century, with Jean Lapierre, a former French Navy officer, deciding in 1935 to dedicate himself exclusively to the land, which was primarily planted with olive trees.
