WINE DESCRIPTION
Domaine la Fouquette Cuvée d'Aurore is a rosé made from a blend of Grenache, Syrah, Mourvedre, Cinsault and Rolle. The grapes are sourced from vines planted in clay and schist soils. All fruit is destemmed and gently pressed as not to extract too much bitterness, tannin or color. Fermentation takes place in temperature-controlled stainless steel tanks. Malolactic conversion, a process used to soften the acidity and contribute buttery flavors is blocked. The aim is to retain freshness and preserve the vibrant red fruit flavors. The wine is matured for a short period in inert vessels prior to bottling.
