Domaine G. Roumier Bourgogne Rouge is a family-run estate that has been overseen by the talented Christophe Roumier, the third-generation winemaker. The grapes for this wine tend to come from holdings in Gilly-lès-Cîteaux. The berries are sorted and mostly destemmed, the exact percentage depending on vineyard and vintage, then placed in wooden fermenters. The juice is given a cool soak to increase extraction of color and aromatics prior to the fermentation. Maturation typically takes place in barrel, with larger proportions of new oak used for the Premier and Grand Cru wines.
