The grapes, often whole-clustered (35-70%), undergo a traditional, hands-on vinification in open concrete tanks, with native yeast fermentation enhanced by regular punch-downs and pump-overs. Gravity-led transfers and aging in large oak vessels (foudres and demi-muids) for 12 to 15 months ensure a pure, unfiltered bottling.
