WINE DESCRIPTION
The grapes come from 0.43 hectares of the prestigious Grand Cru vineyard "Clos de La Roche." This parcel features clay-limestone soil, and the vines are over 30 years old, farmed according to biodynamic principles. The grapes are hand-harvested in small crates, carefully selected in the vineyard and again at the sorting table, and then fully destemmed. The winemaking process includes a cold soak at 12-16°C, followed by spontaneous fermentation. The wine is aged for 16 months in barriques, with 50% new oak and 50% second- and third-use barrels. After racking, it is bottled unfiltered and unfined.
