Domaine Agnès et Didier Dauvissat's Chablis Premier Cru 'Beauroy' epitomizes the elegance and minerality of Chablis with a distinctive character. Sourced from a 2-hectare, south-east facing parcel in the esteemed 'Beauroy' Premier Cru vineyard, this wine is crafted from 50-year-old Chardonnay vines planted in fossil-rich, calcareous soils. The vineyard’s strategic location between Beines and Poinchy contributes to the wine’s unique terroir expression.
The grapes are harvested late and by hand, ensuring optimal ripeness. The wine undergoes a temperature-controlled fermentation followed by a complete malolactic fermentation. It is aged for ten months in stainless steel tanks to preserve its crisp character and purity.
